PEPPERRY EGG FRY


Whenever i need to make something quick to go with chapathi's i tend to lean on eggs.Egg dishes are so easy to make and tastes great.Peppery egg fry are spicy and delicious.I saw the pic of peppery egg in suma's blog . Something new made with egg and it catches my eye.I was simply drooling looking at the pic that i had to make it immediately. Result was not at all surprising - ABSOLUTELY PEPPERYABULOUS. It tastes good on its own and is great as an appetiser, made it multiple times. But this time i wanted something to go with chapathi's so i stir fried it with some onions, tomatoes and more pepper.They taste even more fabulous.

INGREDIENTS

Boiled egg - 3-4 nos
Freshly ground pepper - 2 tbsp + 2 tsp
salt to taste
oil - 1 tbsp
Onions - 1 medium size, thinly sliced
Tomato - 1 medium size, sliced
Ginger - 1 tsp, chopped
Garlic - 1 tsp ,  chopped
Curry leaves - 1 sprig
Green leaves - 2 nos, slit

METHOD

Mix 2tbsp of pepper and some salt.Prick the eggs with the help of a fork. Then coat it in the ground pepper and salt mixture.In a pan pour some oil just enough to cover the bottom.Shallow fry them until its brown on the outside.Keep aside.



In the same pan fry ginger and garlic for a minute.Add curry leaves and green chillies.Then add the sliced onions.Fry until it turns brown.Add tomatoes and the rest of the pepper pdr.Fry until the tomatoes are fully cooked.Add the fried eggs to the onion tomato mixture.Mix it well.Garnish with cilantro.Serve warm with chapathi.

BROWNIES

"Belated happy new year to all of u".

Let me start this post by sharing a good news with u all. We have a new addition in our family now :).YES!!Hubby and me have been blessed with a healthy baby boy on Oct 19th ,2009.We named him Siddharth.He is 3 months old now .Its a joy having him around.Just cant wait for him to show us his new tricks as he grows.

I wanted to make some brownies for a long time now.Everytime for some reason or the other i kept postponing it.I had to share this good news with something sweet.I found no reason to postpone this any further.Just a week back i came across this very interesting brownie recipe.Unlike other brownie recipes this particular one required an unual ingredient - Avocado.Surprised!!!Well i was too and made up my mind to try it out.The result was astounding.Not a trace of avocado but a gooey rich chocolatey nutty taste.Too good to be true.Every chocolate lover has got to try this recipe out.I made some modifications to the original recipe.


INGREDIENTS

All purpose flour - 1/2 cup
Cocoa powder - 1/2 cup
Instant Espresso powder - 1 tsp
Salt - 1/2 tsp
Almonds - 1/2 cup
Cashew nuts - 1/2 cup
Dark chocolate - 3.5 oz
Canola oil - 1/2 cup
Ripe Hass avocado - 1 large
Eggs - 6 nos
Granulated sugar - 1/4 cup
Dark brown sugar - 1 cup
Dried cranberries - 1/4 cup

METHOD

Preheat oven to 350 deg F.In a bowl sift together flour,cocoa,espresso pdr and salt.Light roast the nuts and chop them into small pieces.Mix it with the flour and cocoa.Chop chocolate also into small chunks and mix it with the flour and keep aside.In a blender mix together eggs, avocado, sugar, oil to a smooth paste.Now pour this mixture into the bowl with flour and cocoa and slowly mix it using a whisk.

Pour this mixture into a baking dish coated with butter.Pu the cranberries evenly on top. Bake for 30-35 mins.Let it cool completely before cutting.Serve at room temperature.

BANANA NUT MUFFIN

Muffins are one of the most popular breakfast item in USA.As you can see they are very similar to cupcakes.So how can you identify one from the other?

Well cupcakes are always made with white flour and are light in weight,sweet and often covered with icing.They are smaller in size.Muffins are bigger in size and heavier in texture and weight,mostly containing some kind of fruit and nuts.Unlike cupcakes,muffins are never iced and not as sweet.They can be made healthier by preparing it with wheat flour,bran or oats.
That said i personally dont like having muffins for breakfast.Even though its not very sweet,its sweet enough for me to have it as a dessert.I like it that way.Here i have prepared banana nut muffins.I used ripe bananas that are firm to touch and not overipe ones.I also didnt mash them fully,kept chunks of banana pieces so that i get a bite of it ones in a while.Instead of using a whole cup of sugar or brown sugar i used 1/2 of both.The result was soft,moist and fluffy.

INGREDIENTS

All purpose flour(bleached) - 2 cups

Baking soda - 1 1/2 tsp

cardamam pdr - 1/2 tsp

salt - 1/2 tsp

eggs - 2 (room temp)

Ripe bananas - 4(mash it to chunky pieces)

Sugar - 1/2 cup

Brown sugar - 1/2 cup

oil - 1/2 cup

Vanilla tsp - 2 tsp

sliced almonds - 1/4 cup(for topping)


METHOD

Preheat oven to 375 deg F.Sift the flour,soda,cardamam pdr and salt and keep aside.In a mixing bowl whisk together eggs,sugar and brown sugar until it becomes thick.Add the oil,vanilla and mashed banana.Mix it well.Using a spatula slowly fold in the dry ingredients until just mixed.Line the muffin pan with paper cups and grease it with non stick spray.Using an ice cream scoop pour the batter into the greased paper cups.Top it with sliced almonds.Bake it for 15 - 20 mins or until the toothpick inserted in the center comes out clean.Serve it warm.

CARAMEL CUSTARD - T & T

The first time i had caramel custard was in manipal during my college days.It tasted slightly eggy but sure was delicious.Ones in a while i do get cravings to have one of these and so i was always on a lookout for the recipe.Thats how i came upon nupur's caramel custard recipe .I had prepared it long time back and it was really delicious ,better than what i had in manipal. Zlamushka's Tried n Tasted event was the right oppurtunity for me to prepare it again.Though this time i made some minor changes.I added 2 slices of bread instead of 1 and instead of 6 tbsp of sugar i added 7.
